Congrats, CW! I love the concept of having everything come from as close as possible. I have started being more aware of where my food is coming from and try to eat as little processed food as possible.
It’s nice to know there are chefs (and their wives) out there that care as well. It makes dining out that much more enjoyable. Granted, I’m in Chicago, but hopefully some day I’ll be able to check out your place.
And congrats on being the Eco Manager! A new challange which I am certain you’ll love!
