Family Dinner #5: Souper Soba Soup
Published in Widow Dinner by chefswidowLouisiana perfects her slurping technique
Today’s installment of Family Dinner is so freaking easy it’s embarrassing. If you only have ten minutes to spare then this is the dinner for you!
Souper Soba Soup
1 Pack of Soba Noodles
3 c. chicken or veg stock
1/2 c. water
2 green onions
1/2 tsp sesame oil
2 tsp soy sauce
handful of frozen spinach
s & p
To Make:
1. Put stock and water in a pot on the stove. Bring to a slow boil. Add noodles, simmer to cook.
2. While noodles simmer, cut green onion tips. Add to pot.
3. Add oil & soy sauce to noodles. Simmer.
4. Add s & p to taste.
5. While hot pour soup in bowls. Give your kids a handful of frozen spinach to ‘cook’ themselves in their own soup.
6. Have the kids drop their frozen spinach in the bowl to cool the soup off and cook the spinach. My kids LOVE this past and eat every last bit (including the spinach they cooked)!
7. Enjoy!
Finished product yo. Happy kids means happy mom!

You can also put chilli oil in if your kids are down with spice. Mine aren’t so I omit.
Looks really good. And crazy simple. Will be tried soon…
You’re making my life as a mother so much easier with this series of recipes. Love. Love. Love. (and I’m so making this for my kiddos)
It is SO STUPID EASY. And it’s tasty. I just had leftovers 5 minutes ago.
I can’t wait to try this!….love that you are sharing family recipes!
possibly stupid Q, but is fresh spinach interchangeable with the frozen in this? I would think if it gets thrown in the pot earlier, it’ll cook down?
This is something new.. Love to try this out! My son will surely love this dish..
He love noodles!
The reason we add the frozen spinach is more for effect and involvement with the kids and their food. Fresh spinach will no doubt be delicious!
(weird: your reply to my Q shows up as if it were posted by me.)
that said, I couldn’t wait to try out this recipe, so I made it yesterday, with fresh spinach and it turned out fine. great, as a matter of fact. I wanted to try escarole but Heinen’s didn’t have any. But, this was so quick and easy and is pretty healthy, that it has been vaulted to my “go to” recipe list. I’ll probably make it every week or 2–I’m cooking for 1, so it will go a long way.
Thank you for the recipe you have provided us here and I am really hoping that I can try it this weekend…
I want to try this one…I think this is really a big help…Thanks for the recipe then…
I love this idea…She is so cute!
Very smart of you, to get the kids ihands-on with the spinach. No doubt your kids wlove vegetables. Mine did too!
