Sprout & Choke Salad

Sounds a little drrrrty doesn't it? Yesterday the Chef and I hung out at home and packed a zombie apocalypse survival bag. More on that to come. As we prepared for our coexistence with the walking dead the Chef helped me make some lunch. In less than five minutes he showed me how to make this super easy, crazy delicious (Brussel) Sprout & (Sun) Choke Salad. In turn, I thought I'd share with you:

Sprout & Choke Salad

What You Need:

2 c. Brussel Sprouts

1/2 c. Sun Choke (or romanesco purple cauliflower)

1/4 c. Apple (if you want to add sweet)

2 tbs. olive oil

lemon zest & juice

splash of vinegar

parmesan

s & p

How to Make:

1. Use a mandolin to slice brussel sprouts, sunchokes (or cauliflower), and apple. BE CAREFUL and GO SLOW!!! I am currently rocking a pretty nice mandolin cut which hurts about 4,000 times worse than a normal knife cut.

2. Add olive oil, lemon zest, lemon juice, vinegar, salt & pepper.

3. Let sit for minimum 15 minutes.

4. When ready to eat, stir gently and plate. Add some shaved parmesan to finish.

5. Enjoy!!
